|2 Tbsp||Butter or Margarine|
|2||Large Garlic Cloves|
|½ cup||Chopped Onion|
|1× 14.5 oz can||Diced Tomatoes|
|41-60||Count Pkg Cooked Shrimp, peeled and deveined|
|½ cup||Cooking White Wine|
|1 can||Pepper Jack Cheese Soup|
|½ cup||Chopped Fresh Cilantro|
|Rice or Pasta, cooked|
Melt butter over medium high heat. Add garlic and saute for 1 minute. Add onion and saute for about 2 minutes. Add can diced tomatoes and stir 2-3 minutes more. Add cooked shrimp, white wine, can of soup and cook until heated through and bubbly, stirring occasionally. Reduce heat to low and add cilantro. Stir and serve over rice or pasta.
This is really quick to make especially if you buy packaged shrimp that is already peeled and deveined, and it gets rave reviews from my family.
