Parsley, thyme and dill weed combine in a buttery mixture with Parmesan cheese, onion and garlic to season chunks of potatoes before baking.

  • Servings: 8-10


4 lb Red Potatoes
½ An Onion, chopped
4 cloves Garlic, minced
½ cup Parmesan Cheese
1 Tbsp Dried Parsley Flakes
1 tsp Dried Thyme
1½ tsp Salt, or to taste
½ tsp Dried Dill Weed
½ cup (1 Stick) Butter, melted


Wash potatoes and cut into 1-inch pieces. Mix the rest of the ingredients in a large bowl until combined. Stir in potatoes and coat well with seasoning mixture. Spoon onto two jelly roll pans; bake at 400 degrees for 45 to 60 minutes or until fork-tender.

Serve these delicious potatoes with roast beef or chicken and a salad for a scrumptious, well-balanced meal. Kids love these potatoes dipped in ketchup!
