Ingredients:
| 4 lb | Red Potatoes |
| ½ | An Onion, chopped |
| 4 cloves | Garlic, minced |
| ½ cup | Parmesan Cheese |
| 1 Tbsp | Dried Parsley Flakes |
| 1 tsp | Dried Thyme |
| 1½ tsp | Salt, or to taste |
| ½ tsp | Dried Dill Weed |
| ½ cup | (1 Stick) Butter, melted |
Directions:
Wash potatoes and cut into 1-inch pieces. Mix the rest of the ingredients in a large bowl until combined. Stir in potatoes and coat well with seasoning mixture. Spoon onto two jelly roll pans; bake at 400 degrees for 45 to 60 minutes or until fork-tender.
