
Prepare this soup as a side-dish or as a light main-dish for lunch. Peanut butter is stirred into a vegetable and broth mixture, with cayenne added for some spiciness.
In a large saucepan, combine first 5 ingredients. Bring to boiling; reduce heat. Stir in peanut butter and cayenne pepper. Simmer, uncovered, for 5 minutes, stirring occasionally. Garnish with green onions.
