Pesto Pea Salad

Lemon and basil pesto serve as a dressing for fresh spinach with peas and shallots in this light and healthy salad.

  • Servings: 6

Ingredients:

4 cups Baby Spinach, washed and dried
1 Small Shallot, finely diced
1 cup Basil Pesto
½ cup Frozen Peas
1 tsp Lemon Zest
Salt, to taste
Pepper, to taste

Directions:

Combine all ingredients in a large bowl. Let sit at room temperature for at least 15 minutes before serving.
