Pierogi Casserole

This Eastern European recipe is layered with pasta noodles, vegetables, and Velveeta cheese.
 

Ingredients

  • 1 12oz. pkg lasagna noodles
  • 1 large yellow onion, chopped
  • 1 1/4 melted butter
  • 6 C. mashed potatoes
  • 1 C. Velveeta cheese
  • 4 oz. sauerkraut, drained
  • paprika, salt, & pepper to taste

Method

Prepare noodles, set aside. Saute onion in butter. In 9x13 glass pan, spread a portion of butter/onion mixture over the bottom. Cover bottom with noodles. Spread 2 C. of the potatoes over. Place 1/3 of cheese on left side of casserole on potatoes. Place 1/3 sauerkraut on left side. Spread 1/2 the noodles on top. Pour 1/2 C. butter/onion mixture over the noodles. Layer 2 cups potato, then cheese or sauerkraut, noodles then butter and onions. Repeat layers. Complete with layer of noodles covered with onions and butter. Sprinkle top with paprika, salt & pepper. Bake at 400 for 45 minutes.
