Pineapple Honey Garlic Chicken

This savory pineapple, honey, garlic sauce gives this healthy chicken dinner such a nice flavor; it will become a regular in your household.
 

Ingredients

  • Non-stick cooking spray
  • 4 boneless skinless chicken breasts
  • 1 medium onion
  • 1 cup sliced fresh mushrooms
  • 1 tsp finely minced garlic or bottled garlic puree
  • 1/2 cup low sodium chicken broth
  • 1/4 cup low sodium soy sauce
  • 1/4 cup honey
  • 2 tsp freshly grated ginger
  • 1 20 oz can pineapple tidbits, drained - reserve juice
  • 2 tbsp cornstarch

Method

Coat a large skillet with non-stick cooking spray, heat over medium-high heat and sear chicken until nicely browned on both sides, about 5-8 minutes. Remove chicken from pan and keep warm on a foil covered plate. Add onion, mushrooms and garlic to pan and saute for 5 minutes; add chicken broth a little at a time to keep mixture from sticking. Add soy sauce, honey, ginger and pineapple to skillet, reduce heat and simmer covered for 20 minutes or until chicken is cooked through (cut to test). Remove chicken to serving platter and increase heat to medium high, mix pineapple juice with cornstarch and add to skillet. Bring to boil and cook until sauce has thickened. Pour over chicken and serve over rice if desired.

 

Notes: This chicken recipe uses virtually no fat. Using low sodium broth and soy sauce keeps the sodium count down, while giving it a savory flavor. I serve this often, and no one thinks it's a "light" recipe because it's so flavorful and satisfying.
