Piperade on Toasted English Muffins

A traditional Basque dish, this version contains green and red bell peppers, onion, tomato, ham, garlic, and beaten eggs, and is served over toasted English muffins.
 

Ingredients

  • 1/4 cup olive oil
  • 1 medium onion, finely chopped
  • 3/4 cup green bell pepper, thinly sliced
  • 3/4 cup red bell pepper, thinly sliced
  • 2 garlic cloves, peeled and minced
  • 1 slice ham, cut into strips
  • 1 large tomato, well chopped
  • 4 eggs
  • Chopped parsley
  • Salt and pepper, to taste
  • 4 English Muffins, split and toasted
  • Butter

Method

In skillet heat oil medium heat; saute onions, bell peppers and garlic until tender, about 5 minutes. Add ham and tomatoes. Cook until vegetables are softened, about 5 minutes more. In small bowl beat eggs; pour over all. Gently mix together; cook about 2 more minutes until eggs are done. Sprinkle with salt, pepper and parsley. Split English Muffins halves. Toast and spread with butter. Spoon egg mixture on top of muffin halves.
