Pita Pocket Pizzas


Pita bread pockets are stuffed with chopped tomato, shredded cheese and basil leaves to make these quick-to-fix "pizzas."



Ingredients:

  • 4 pita pockets
  • 3 or 4 Roma tomatoes, chopped
  • 2 cups shredded mozzarella cheese
  • 16 fresh basil leaves

Method

Preheat oven to 350 degrees. Cut the pitas in half crosswise to make 8 pockets. Divide the tomatoes and cheese evenly and sprinkle inside the 8 halves. Put 2 basil leaves inside each. Place on a baking sheet. Bake for 8-10 minutes or until cheese is melted.
