Polenta Pizza

A unique pizza that pairs traditional Greek flavors with a polenta crust.
 

Ingredients

  • 1 18 oz tube refrigerated pre-cooked polenta
  • 2 cups feta cheese
  • 1 cup sliced Roma tomatoes
  • 2/3 cup fresh spinach leaves, torn
  • 2/3 cup sliced black olives
  • 2/3 cup thinly sliced red onions

Method

Preheat oven to 375 degrees. Spray 9 x 13 baking dish with nonstick spray. Press polenta into bottom of pan evenly. Top evenly with crumbled feta. Follow with remaining ingredients. Bake for 10-15 miuntes. Slice into squares and serve.
