Portobello mushrooms are grilled, spread with tomato sauce, sprinkled with mozzarella, Romano and pepper, and baked.
Remove stem from each mushroom; brush both sides of mushroom lightly with olive oil. Broil mushrooms about five minutes, turning once. Remove from oven.
Turn mushrooms so that the underside of each cap is up; spread with tomato sauce, then sprinkle with mozzarella and Romano cheeses, and pepper to taste. Return to oven at 400 degrees until cheese is melted, about 10 minutes.
Notes:
Great for low-carb diets. Tastes somewhat like baked eggplant.
