Potato Dumplings

These egg-rich dumplings are made with instant mashed potatoes and flour to make an easy side dish. The dumpling dough is rolled into a rope, cut into portions and then boiled in water.
 

Ingredients

  • 3 eggs
  • 1 1/2 cups water
  • 2 cups Hungry Jack Potato Flakes
  • 1 1/2 cups flour
  • 1 tsp salt

Method

Mix together eggs, water, and potato flakes; let stand for 10 minutes. Mix in flour and salt; turn out as you would bread; knead for a few minutes. Roll out in ropes, about the diameter of a half dollar. Cut into lengths of about 3 inches. Place in gently boiling water and boil for 10 minutes. Remove with slotted spoon and drain. May be eaten with gravy or cooked cabbage.
