Ingredients:
| 3 | Yukon Gold Potatoes, peeled, boiled & mashed |
| 1 | Egg, beaten |
| 1 | Leek, diced & sweated in butter |
| ΒΌ cup | Chopped Chives |
| Salt, pepper, prepared horseradish & hot sauce, to taste | |
| 4 | 8x8" Spring Roll Wrappers |
| Egg Wash | |
| Peanut Oil, for deep frying | |
Directions:
For the potato roll combine mashed potatoes, egg, leeks, chives, salt, pepper, horseradish & hot sauce. To assemble the roll, place about 1/4th of the potato stuffing on each spring roll wrapper. Brush each corner of the wrapper with egg wash. Fold three corners towards the center forming an envelope. Roll the envelope up toward the remaining point & seal securely. Heat peanut oil to 360 degrees & fry until golden brown. Drain on paper towels & serve.
