Quick 5-Cheeze Panini with Sausage and Peppers

This sandwich starts with garlic Texas toast, spread with a vinegar, mustard, mayo mixture. It's topped with links of sweet Italian sausage, red bell pepper, dried tomatoes and packaged 5-Italian cheese, then warmed.
 

Ingredients

  • 2 large links Sweet Italian Sausage
  • 1 Red bell pepper, cut in fourths
  • 1 cup Kraft 5-Italian Cheese blend
  • 4 slices of garlic Texas toast
  • 10 dried tomatoes, whole
  • Salt to taste
  • SAUCE -
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon deli mustard
  • 1 clove crushed garlic
  • 1 tablespoon mayonaise
  • 1 tablespoon fresh basil, whole

Method

In a convection frying pan or similar pan, cook peppers with sausage, covered, keeping whole; set aside. Wipe pan. Prepare sauce by mixing mustard, garlic, mayonnaise, basil and vinegar in a small cup. Set aside. Cut sausage the long way to create 1/4-inch thick strips about 4 inches long. Set pan on low heat, adding two pieces of garlic toast to bottom. While that is cooking, spoon half of sauce on each slice, then layer sausage, peppers, dried tomatoes, then 1/4 the cheese on each. Finish with the top piece of bread. Cook, flattening slightly, about 5 minutes on each side on medium heat, flipping carefully. Top with remaining cheese; cover pan to melt. Serve cut in two.

 

Notes: I use Turkey sausage with this recipe for a lower-cal meal with less grease.
