Quick and Easy Mexican Pizza

These individual pizzas are made with flour tortillas instead of the usual crust. A mix of ground beef, salsa, & ketchup, plus mild cheese go on top.
Ingredients
- 6-8 ounces ground beef chuck
- 2/3 cup chopped green pepper
- 2/3 cup chopped onion
- 1/2 teaspoon salt
- 1 cup chunky mild salsa
- 1/3 cup ketchup
- 4, 8-inch flour tortillas
- 1 cup finely shredded mild cheddar and Monterey Jack cheese

Place crumbled ground chuck in nonstick skillet over medium heat. Add green pepper, onion, and salt. Cook stirring constantly until ground chuck is done, about 5 minutes. Add salsa and ketchup. Stir and continue cooking about 3 minutes. Lightly spray a baking sheet with cooking spray. Place tortillas on baking sheet. Spread beef mixture evenly on tortillas. Flatten mixture with back of large spoon. Sprinkle 1/4 cup of cheese on each pizza. Heat in 350 degree oven about 5 minutes until cheese is melted.
Notes: This recipe is quick and easy. Buy cheese already shredded. If time is a factor, chop onion and peppers ahead of time and put in refrigerator. It's easy to get dinner on the table quickly after a busy day. Just add a salad to complete meal.
