Quick Mushroom Ragu

This hearty vegetable pasta dish makes a great addition to any meal or can easily stand alone as the main dish. Cremini mushrooms add so much flavor.
Ingredients
- 1/2 pound pasta
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 onion, diced
- 1/2 lbs cremini mushrooms, rinsed and cut into matchsticks
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 cup chicken stock
- 1 tsp grated lemon skin
- Chopped fresh flat leaf parsley to taste
- Parmesan cheese to taste

Method
Fill a pot with water and bring to a boil then add salt and pasta. Cook pasta accordingly to box. Place garlic and olive oil in a medium skillet and heat to medium high. When garlic is fragrant, add onion and saute for 3-4 minutes, then add mushrooms, salt and pepper. Saute 3-4 minutes, add chicken stock to skillet mixture and allow moisture to be absorbed by vegetables. When most of the moisture is gone, add grated lemon zest, flat leaf parsley and Parmesan cheese. Place desired amount of vegetable mixture on top of pasta.
