Quick Corn & Black Bean Chili


A quick-and-easy vegetable chili.



Ingredients:

  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 cup chunky salsa
  • 1 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1/2 tsp. dried oregano, crushed
  • Chopped fresh cilanto and/or green onions (optional)

Method

In a saucepan combine all ingredients; heat through.

Notes: For salsa/salad: Add 1/2 cup fat free Italian dressing & 1 tsp olive oil to chili recipe. Do not heat. Refrigerate overnight.

Number of servings: 4 - 6
