Real German Potato Salad

This real German recipe uses olive oil instead of mayonnaise or vinegar. Bacon, sweet relish, onions and eggs give this dish a traditional flavor.
Ingredients
- 8-10 peeled, cubed russett potatoes
- 1/4 cup sweet pickle relish
- 1/4 cup white onions
- 1/4 cup bacon, cooked, drained and diced
- 1/4 cup olive oil
- 4 hard boiled eggs, diced
- Salt and pepper to taste

Method
Boil 8-10 potatoes, cut and cube. Once potatoes have cooled, add the sweet pickle relish, white onion, bacon, olive oil, and hard boiled eggs. Salt and pepper. Stir and taste. You may adjust pickle relish and olive oil as needed.
