Cooked and cooled white (or brown) rice, feta cheese & tomatoes are seasoned with lemon juice, dillweed, & garlic in this salad.
Whisk together lemon juice, olive oil, dill and garlic. Season with salt and pepper to taste. Toss dressing thoroughly with rice. Toss in tomatoes and feta. Adjust seasoning, adding more lemon juice, salt or pepper, if desired.
Notes:
Brown rice is a healthy, delicious alternative in this easy salad. Use halved cherry tomatoes, if grape tomatoes aren't available.
