Rice Salad with Grape Tomatoes and Feta Cheese


Cooked and cooled white (or brown) rice, feta cheese & tomatoes are seasoned with lemon juice, dillweed, & garlic in this salad.



Ingredients:

  • 3 cups cooked rice, fully cooled
  • 2 Tbsp lemon juice
  • 3 Tbsp olive oil
  • 1/2 to 1 Tbsp dried dillweed
  • 1 clove garlic, crushed
  • Salt and pepper
  • 4 ounce crumbled feta cheese (1 cup)
  • 1 pint (2 cups) grape tomatoes, halved

Method

Whisk together lemon juice, olive oil, dill and garlic. Season with salt and pepper to taste. Toss dressing thoroughly with rice. Toss in tomatoes and feta. Adjust seasoning, adding more lemon juice, salt or pepper, if desired.

Notes: Brown rice is a healthy, delicious alternative in this easy salad. Use halved cherry tomatoes, if grape tomatoes aren't available.
