Rich Twice-Baked Potatoes with Fresh Herbs

These rich and flavorful potatoes are baked and combined with cream cheese, sour cream, butter, and shredded gouda and cheddar cheese, in addition to chopped fresh basil, chives and parsley.
Ingredients
- 8 Medium baking potatoes
- 1 8 oz. package cream cheese
- 1/2 cup sour cream
- 1/2 stick butter, melted
- 1/4 cup shredded gouda cheese
- 1/4 cup shredded cheddar cheese
- 1 Tablespoon chopped fresh basil
- 2 Tablespoons chopped fresh parsley
- 2 Tablespoons chopped chives (green onion tops also work)
- 1/2 teaspoon garlic salt

Method
Bake potatoes at 400 degrees for 1 hour. Remove potatoes and let cool for 10 minutes. Cut each potato in half the long way. With a teaspoon, scoop the insides of the potatoes into a bowl, saving the skin. Add the rest of the ingredients to the potatoes and mix with an electric mixer until smooth. If the mixture seems too thick, you can add a bit of milk to thin it out. Place potato skins onto a cookie sheet. Spoon potato mixture back into skins, and bake another 20-30 minutes.
