Rigatoni & Gravy


The "gravy" in this easy pasta recipe is a jar of marinara sauce that's dressed up with onions, carrots, green pepper, and garlic.



Ingredients:

  • 1/2 box Barilla rigatoni
  • 1/2 - 3/4 jar Barilla marinara sauce
  • 2 small carrots, diced
  • 1 small onion, diced
  • 1 small green pepper, diced
  • 1 to 2 cloves garlic, minced
  • Olive oil
  • Dash salt and pepper
  • Fresh Parmesan cheese, grated

Method

Cook pasta as directed on box. Meanwhile, to make the gravy, heat olive oil in a large sauce pan. Add carrots, onion, green pepper, garlic, salt, and pepper. Cook and stir for about 7 to 10 minutes. Add marinara sauce to pan and stir to combine. Drain pasta and top with gravy and Parmesan cheese.

Notes: Any type of vegetable can be added to the gravy. You can also put the pasta and gravy in a caserole dish, top with mozzarella and Parmesan cheese and bake until the cheese is browned.
