Roasted Garlic and Herb Stuffed Potatoes

The centers of small baking potatoes are cored and filled with garlic and thyme, then baked and topped with Parmesan.
 

Ingredients

  • 2 lbs small Yukon Gold potatoes
  • 1 head garlic
  • 3-4 sprigs fresh thyme
  • 1 tsp sea salt
  • 1 tablespoon olive oil
  • Fresh ground pepper to taste
  • 3 oz shredded Parmesan cheese
 
Method

Preheat oven to 350 degrees. Slice 1/4 inch off bottom of each potato, so they stand upright in a small baking dish. Using an apple corer, core and remove the center of each potato. Place side by side in dish. Peel and coarsely chop garlic. Combine with herbs and salt. Fill center of each potato with garlic and herb mixture. Drizzle olive oil over the tops. Add fresh ground pepper to taste. Cover with aluminum foil and bake at 350 degrees for 1 hour. Remove foil, test for doneness, top with cheese and return, uncovered, to oven for another 5 minutes or until cheese is melted.

 

Notes: In this simple, but unusual recipe, the garlic actually roasts inside of each potato, infusing it with flavor. While this may sound like a lot of garlic, roasting actually mellows the flavor and brings out the sweetness. This dish is also heart-healthy, very low in fat.
