Roasted Grape Chutney

an unusual chutney - with a crisp grape favor.

  • Servings: 4-6
  • Prep Time: 10 mins
  • Cook Time: 20 - 30 mins
  • Total Time: about 1 hr.

Ingredients:

1 cup Seedless Red Grapes, havled
1 cup Seedless Green Grapes, havled
1 Tbsp Olive Oil
1 Tbsp Red Wine Vinegar
1 tsp Dried Thyme
½ tsp Kosher Salt
¼ tsp Pepper

Directions:

Preheat oven to 425*

Stir together all ingredients. Spread grape mixture on an aluminum foil-lined baking sheet. Bake 20 mins. or until grapes begin to shrivel.

Remove from oven, and let cool 30 mins. Store in refrigerator up to 3 days.

Makes 1 1/2 cups.
