Roasted Red Pepper Pasta

Sweet pepper, whipping cream, Parmesan cheese, and Cajun seasoning are simmered to make the sauce, sausage is added and it's served over hot pasta.
Ingredients
- 1 pound smoked sausage, sliced
- 1 large red sweet pepper
- 1 pint whipping cream
- 1/2 cup Parmesan cheese
- 1/2 tsp. Cajun seasoning
- 1 box of pasta, any shape
- Chopped green onions to garnish

Roast red pepper in a 350 degree oven for 15 minutes. Place pepper in a ziplock plastic bag for 20-30 minutes. Remove and clean out seeds and stem. (If you can buy roasted red peppers, use them and leave off this step.) Cook pasta. Place roasted pepper, cream, Parmesan cheese, and Cajun seasoning in a blender. Cover and puree. Saute sausage in a saucpan; set aside. In another saucepan simmer the pureed pepper mixture until thickened. Add sausage. Serve over pasta. Garnish with green onions.
Notes: This sounds like a lot of work, but it really comes together quickly. Especially if you are able to buy roasted red peppers.
