Roasted Red Pepper for One

Layers of vegetables, herbs and cheese on a toasted ciabatta roll create a quick and healthy pizza for one.Ingredients
- 1 medium red bell pepper
- 1 ciabatta roll
- 1 clove garlic, halved
- 1 tablespoon olive oil
- 1 teaspoon balsamic or wine vinegar
- Pinch red pepper flakes
- Pinch basil
- Pinch oregano
- Pinch sage
- Pinch sugar
- Pinch salt
- Pinch pepper
- 2 ounces fontina, mozzarella or provolone cheese

Roasting a red pepper can be done several ways. It can be skewered and held over the flame of a gas stove until it is charred all over, or placed on a hot stovetop grill pan and turned frequently until charred. If you have an outdoor grill and have the time, peppers are wonderful grilled this way. Whichever way you choose, after the pepper is charred, immediately put it into a brown paper bag, close it, and set aside for 10-15 minutes or until you can peel off the skin. Slice the pepper into thin strips and set aside. Slice ciabatta roll in half and place it on a baking sheet. Set under broiler until it starts to look a pale golden color. Watch carefully so it doesn't burn. Remove from oven and rub halved slices of garlic all over cut sides of roll. In a small cup, stir together olive oil, vinegar and whatever herbs you choose, along with a pinch of sugar, salt and pepper. Brush this over cut sides of rolls. Top with roasted pepper slices, and sun-dried tomatoes, capers, thin slices of prosciutto, etc. Top with favorite cheese, either sliced or cubed. Place under broiler again and broil until cheese is melted.
Notes: Pizzas are so easy to make and all you do is add your favorite toppings and cheeses. What is nice about this recipe is that you can buy one red pepper, one crusty roll, and small amounts of other ingredients and you will have no leftovers. If you go to a deli, you can buy just ounces of things like pitted kalamata olives, prosciutto, a few fresh mozzarella balls, or other items that are very expensive if you buy an entire carton.
