Roasted Veggie Medley

Roasting brings out the natural flavor in fresh vegetables--this recipe uses eggplant, potatoes, onion and summer squash.
 

Ingredients

  • 1 small eggplant, halved and sliced thinly (skin on)
  • 1 medium white potato, washed, unpeeled, halved and sliced thinly
  • 1 small white onion, peeled, halved and sliced thinly
  • 1 summer squash, washed and sliced thinly
  • 1/3 cup olive oil
  • 1 tbsp roasted chicken flavor seasoning
  • 1/4 tsp cracked black pepper
  • 1/2 tsp sea salt

Method

Heat oven to 500 degrees, prepare veggies and place in large bowl. Add olive oil, seasoning, cracked pepper, and sea salt. Mix and place in a large flat roaster pan. Place in oven for 20-25 minutes, turning once.
