Rockin? Rum and Fruit Salad

Six different fruits make up this colorful salad that's drizzled with a yummy rum and brown sugar mixture.
 

Ingredients

  • 2 pears, peeled, cored, and sliced
  • 2 apples, peeled, cored, and sliced
  • 1 medium pineapple, peeled, cut crosswise into rings, and cored
  • 1 large mango, peeled and sliced
  • 3 kiwifruit, peeled and sliced
  • 3 bananas, peeled and bias-sliced into 1 inch pieces
  • 1 papaya, peeled, halved, seeded, and each half cut into thirds
  • Juice and zest from 3 limes
  • 5 tablespoons dark rum
  • 2 tablespoons brown sugar
  • 1/8 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 10 fresh mint leaves, torn
  • 1 cup whipped half-and-half or light cream (optional)

Method

Preheat broiler. Arrange all fruit on a large cookie sheet. Broil fruit about 5 minutes or until just starting to brown. Meanwhile, in a large bowl combine the lime juice, rum, brown sugar, cinnamon, and cardamom. Place the fruit on a large platter; spoon rum mixture over fruit. Sprinkle with the lime zest and mint. If desired, dollop with whipped cream. Serve immediately.

 

Notes: This is such a de-LIGHT-ful dessert - people ask for it over and over. I do include the whipped light cream but perhaps one person uses it - the rest (as do I) do not use it at all - the rum mixture gives this so much flavor - there's no need.
