Romaine & Spinach Salad with Balsamic Vinaigrette

Goat cheese, dried cranberries, a chopped pear, and toasted walnuts make this tossed green salad extra-special.
 

Ingredients

  • 3 cups pre-washed romaine, torn
  • 3 cups pre-washed baby spinach, torn
  • 1 red pear, chopped
  • 1/2 cup dried cranberries
  • 4 oz. goat cheese, crumbled
  • 4 oz. walnuts, toasted and coarsely chopped
  • 1/2 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon poppy seeds
  • 1 teaspoon brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method

In a salad bowl combine romaine, baby spinach, pear, cranberries, cheese, and walnuts; set aside. For vinaigrette, whisk to together vinegar, oil, garlic, poppy seeds, brown sugar, salt, and pepper; pour over salad. Toss to combine.
