Root Vegetable Chips

Very thin slices of parsnips, sweet potatoes, rutabaga, turnips, and/or beets are deep fried in hot oil, then seasoned with salt.
 

Ingredients

  • Oil for deep frying.
  • Parsnips, sweet potatoes, rutabaga, turnips, and/or beets, peeled and very thinly sliced.
  • Salt.

Method

Heat oil to 375. Peel and thinly slice the vegetables. Place slices in a bowl of ice water. Remove from the water, drain very well, and pat dry with paper towels. Carefully place slices in the hot oil. Fry until just starting to brown. Drain on paper towels and lightly salt while still hot.

 

Notes: Use salt to taste.
