Rotel Chicken

Cooked angel hair pasta is combined with chunks of cooked chicken, cream of mushroom soup, Velveeta cheese, and Rotel tomatoes, then baked.
Ingredients
- 4 whole bone-in chicken breasts (skin removed)
- 1 large onion, chopped
- 1 can Rotel tomatoes with green chilies
- 1 can cream of mushroom soup
- 1 lb. Velveeta cheese, cut up
- 7 oz. Angel Hair Pasta

Method
Boil chicken and onion in water to cover until tender. Cut up chicken, discarding bones; set aside. Remove and reserve 1 cup of the broth. Cook pasta in the remaining broth with onions (may need to add more water.) Drain pasta and onions. In large micro-safe bowl mix cream of mushroom soup, rotel tomatoes, and cheese; cook in microwave until cheese is melted. Add chichen, pasta and onions, and the reserved 1 cup broth. Mix well. Place in pyrex baking dish; bake at 350 for 20 - 25 minutes.
Notes: Enough to split into 2 parts and freeze one.
