Scalloped Swiss Potatoes

A creamy casserole with potatoes, garlic and Swiss cheese--great for family dinners or entertaining guests.
 

Ingredients

  • 2 tablespoon butter
  • 2 cloves garlic, finely minced
  • 1 1/3 cups half and half
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 6 medium baking potatoes
  • 1 1/2 cups (6 ounces) shredded Swiss cheese
 
Method

Preheat oven to 350 degrees and spray an 11 X 13 inch baking dish with nonstick spray. In a large saucepan, melt butter over medium heat and saute garlic for 5 minutes, just until transparent. Add half and half, salt and pepper, bring to a simmer, then remove from heat. Thinly slice potatoes and layer 1/3 in baking dish; top with 1/3 cheese. Repeat layers, ending with cheese. Pour half and half mixture over layered potatoes. Cover pan tightly with foil and bake covered for 25 minutes. Uncover and continue baking for 35 minutes or until potatoes are tender and top is browned. Let stand 10 minutes before serving.

 

Notes: This cheesy dish is a favorite with everyone. I make it for special occasions, for potlucks and to dress up an ordinary dinner of broiled chicken breasts or meatloaf.
