Ingredients:
| 4 oz | Cooked Lobster Meat, cut into bite sized pieces |
| 4 oz | Cooked Crab Meat, cut into bite sized pieces |
| 4 oz | Cooked Peeled & Deveined Shrimp, cut into bite sized pieces |
| 1 | Rib Celery, finely diced |
| 2 | Green Onions, finely chopped |
| 2 Tbsp | Mayonnaise |
| 2 Tbsp | Sour Cream |
| 1 Tbsp | Buttermilk |
| ½ | Tsp Salt or, to taste |
| ¼ tsp | Freshly Ground Black Pepper or, to taste |
| ½ tsp | Seafood Seasoning or, to taste |
| 8 slices | Bacon, halved |
| 8 | Slider Rolls, halved horizontally |
| 1½ cups | Guacamole |
Directions:
Combine lobster, crab, shrimp, celery and onion in a medium bowl. In a small bowl, combine the mayonnaise, sour cream, buttermilk, salt, pepper and seafood seasoning, then stir to blend. Pour the dressing over the seafood mixture and toss to blend. Fry the bacon in a large skillet until crisp. Transfer bacon to a paper towel lined plate, but retain bacon grease in pan. Place rolls, cut side down, in skillet and cook until lightly browned, 60-90 seconds. Spread the toasted side of each roll bottom with guacamole. Scoop about 1 1/2 tablespoons of seafood mixture on top of guacamole. Place two pieces of bacon, criss-cross fashion, on top of seafood. Top with a roll top, toasted side down. Serve immediately.
