Seared Chicken Over Garlic Infused Angel Hair


A colorful, healthy and tasty pasta dish with garlic, red and green peppers, and grape tomatoes.



Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 6 Tablespoons olive oil
  • 8 oz angel hair pasta
  • 1 1/2 Tablespoons sweet onion, finely minced
  • 4 cloves garlic, finely minced
  • 14 oz can chicken broth
  • 2/3 cup green bell pepper, cut into 2 inch strips
  • 2/3 cup red bell pepper, cut into 2 inch strips
  • 1 cup sweet onion, cut into 2 inch strips
  • 28 grape tomatoes, halved
  • Parmesan cheese, for grating

Method

Preheat oven to 350 degrees. Heat large skillet on stove on medium to medium high heat. Blend salt, pepper, garlic powder, and onion powder. Sprinkle on both sides of chicken. Put 2 tablespoon of olive oil in hot skillet and allow to heat for 1 minute. Add chicken to skillet. Allow to sear for 4 minutes. Turn chicken, and sear an additional 4 minutes. Remove chicken and place in a casserole dish. Cover with aluminum foil and place in oven. Cook for an additional 10 minutes or until juices run clear in chicken. While chicken is searing, cook pasta according to package instructions. Heat a medium saucepan on medium high heat. Add 3 Tablespoons of olive oil and allow to heat for 1 minute. Add minced garlic and onion, and cook just until garlic begins to brown and onion is soft. Add 1 1/2 cups (12 oz) of chicken broth and bring to a steady boil. Reduce heat, and simmer until sauce has reduced by half. Once reduced, stir in pasta making sure to coat the pasta with sauce. Turn heat down to warm, and keep warm until time to serve. In the same pan the chicken was seared in, add 1 tablespoon of olive oil and remaining chicken broth. Heat on medium high heat for 1 minute. Add pepper and onion strips and allow to saute for approximately 5 minutes or until peppers and onions begin to soften. Add tomatoes and saute for an additional 2-3 minutes. The tomatoes should begin to soften but not fall apart. Remove from heat. To serve, divide pasta among 4 plates. Divide pepper onion tomato mixture over pasta. Slice chicken and divide slices, then fan slices over vegetables. Grate 1, or more, Tablespoons of parmesan cheese over top.
