Seasoned Squash Medley

Potatoes and squash are roasted with rosemary, thyme, salt and pepper for a tasty flavor that makes a great addition to any meal.
Ingredients
- 4 medium golden Yukon potatoes
- 1 butternut squash
- 1 tbsp rosemary
- 1/2 tbsp thyme
- 1/4 tsp black pepper or fresh ground
- 1/8 tsp salt
- 1/8 tsp seasoned salt
- Olive oil

Preheat oven to 425 degrees. Wash potatoes and butternut squash. Peel and cut squash into 1/2 inch chunks. Cut potatoes into 1/2 inch chunks. Place squash and potatoes in 8 X 8 baking dish. Pour olive oil over mixture and toss until well coated. In a separate bowl, combine rosemary, thyme, pepper and salts. Sprinkle seasonings over vegetables and stir until evenly coated. Bake uncovered for 30 minutes or until vegetables can be easily cut with a fork.
