A large flour tortilla set in a pie plate forms the "crust." The filling is fresh spinach topped with cheese and a seasoned egg mixture.
Mix the first six ingredients (eggs, milk, garlic, lemon pepper, salt and bacon) in a bowl. Set aside.
Lay the flour tortilla in a lightly oiled GLASS 9" pie dish, press gently--it does not need to lay perfectly flat against dish.
Sprinkle spinach and 1 cup of the cheese into tortilla and press gently.
Pour egg mixture slowly and evenly over spinach, being careful not to pour any outside the tortilla.
Sprinkle remaining cheese on top.
Bake in oven at 375 degrees for 35 to 45 minutes. Insert fork in center and it should come out clean.
Use sharp knife to cut into slices and serve hot. For added flavor, serve with homemade or purchased salsa and/or sour cream.
Notes:
The tortilla adds a delicious crunchy shell and it smells so good while it is cooking. I actually made up this recipe from items in my kitchen and couldn't believe how wonderful it tasted. It is now a hit in my family and so EASY to make. I have received many positive feedbacks from family and guests. Super healthy and easy to make.
