Shrimp and Cabbage Salad

This cabbage and shrimp salad uses ramen noodles which are cooked just briefly before adding to the salad mixture. It does not use the seasonings from the noodles, but has its own dressing made with oil and rice vinegar.
 

Ingredients

  • Dressing:
  • 1 cup salad oil
  • 4 tbsp. brown sugar
  • 1/2 tsp. pepper
  • 1/2 tsp. salt (or to taste)
  • 6 tbsp. RICE vinegar
  • Salad:
  • 1 head of cabbage
  • 2 cups fresh or frozen salad shrimp, thawed
  • 2 packages ramen noodles (Oriental or shrimp flavor)
  • 5 green onions, sliced

Method

Prepare dressing by combining all of those ingredients, stirring well; set aside. Shred the cabbage and place in large bowl. Drain shrimp and add to the cabbage. Cook the noodles according to package directions, except boil only for 40 seconds and DO NOT add the seasoning packets. Drain noodles, cool, and add to cabbage and shrimp. Add sliced green onion and toss lightly, mixing well. Toss with prepared dressing. Serve cold right from refrigerator.

 

Notes: This salad is easy and delicious. It is best made a day in advance allowing the salad ingredients to marinade in the dressing. This receipe came to me 2nd or 3rd hand. I have made personal changes to improve the flavor.
