Shrimp Veggie with Sauce


Spaghetti squash is baked and shredded. A sauce made with milk, parmesan cheese, butter, shrimp and eggplant is spooned on top.



Ingredients:

  • 1 cup skim milk
  • 1 cup parmesan cheese
  • 1/4 cup butter or margarine
  • 1 10-oz package of precooked shrimp
  • 1 spaghetti squash
  • 1 cup of eggplant, peeled and cut in small pieces, cooked (see note below)

Method

Cut spaghetti squash in half. Bake at 350 for 40 minutes until done. While that is baking, in a saucepan heat butter, milk and cheese, stirring until thick; add shrimp and eggplant. Keep on low heat until spaghetti squash is done. Take out of oven and shred the squash with a fork. Serve with sauce.

Notes: I like to cook the eggplant in fry pan with small amount of grape seed oil. Takes about 5 minutes for it to cook.
