Simplest Ultimate Southwest Chicken

This chicken recipe combines garlic, onion, chili powder, cumin, and cilantro, and the shredded chicken that results may be used several ways.
 

Ingredients

  • 4 cloves garlic, minced
  • 1/2 small diced onion
  • 1/4 cup chili powder
  • 3 Tbsp. ground cumin
  • Salt & pepper to taste
  • 1/4 cup vegetable oil
  • 4 chicken breasts
  • 1/4 cup chopped cilantro

Method

Saute onions and garlic in oil in skillet. Add chili powder, cumin, salt and pepper to pan; heat and stir about 1 minutes to toast the spices (an important step for flavor). Add chicken and cook about 20 minutes. Turn down heat to low; cook about 1 1/2 hours until very tender. Use two forks to shred the chicken. You can add this shredded chicken to: --Cold rice salad, with diced avocado, tomatoes, onions; top with salsa. --Tortillas or taco shells and serve with a tray of diced tomatoes, avocados, purple onions, lettuce, cheese and sour cream. --Add it to the 21st Century Bean Salad which I entered earlier, omitting the canned chicken. The possibilities are endless!

Number of Servings: Lots! It also freezes well for future servings.
