Lasagna is great for dinner parties! This recipe is packed with flavor. If you more vegetables then join the kale train!

Ingredients:

3 cup Frozen Vegetables, thawed
¼ cup Onions, chopped
1 cup Low-fat Ricotta Cheese
1 Egg White
2 cup Fresh Spinach, finely chopped
2 cup Tomato Sauce
12 Uncooked Oven-ready Whole Grain Lasagna Noodles
1 cup Low-fat Mozzarella Cheese, shredded

Directions:

Preheat the oven to 375 degrees F. In a large lightly greased skillet, combine the frozen vegetables, and onions. Sauté until tender. Set aside. In a small bowl, beat the egg into the Ricotta cheese; add the spinach and stir the ingredients. Spoon tomato sauce on the bottom of a lightly greased pan. Place 4 lasagna noodles, 1/2 cup Ricotta mixture, 1/2 C. vegetable mixture, and 3/4 cup of tomato sauce. Repeat pattern once more. Top with noodles and remaining tomato sauce. Trickle cheese on top. Bake covered for 40 minutes. Let it cool for 10 minutes before serving.
