Smoked Salmon Sandwich w/Cream Cheese and Roasted Peppers

Cream cheese combined with mustard and cilantro serves as the spread for these salmon and sweet pepper sandwiches.
Ingredients
- 4 ounces chive cream cheese, softened
- 2 tsp. chopped cilantro
- 1 tsp. Dijon-style mustard
- Ground black pepper
- 4 English Muffins, split
- 1- package thin-sliced smoked salmon
- 1 roasted red sweet pepper, cut into 1/2" strips

Method
In a bowl place the cream cheese, cilantro, Dijon mustard, and ground black pepper to taste. Mix well until smooth. Toast the English Muffins. Top half of the English muffin halves with salmon and pepper strips. Spread cream cheese mixture on remaining muffin halves; place, spread side down, on salmon covered muffin halves.
