Southern Stuffed Squash

The flavors of bacon, mushroom and onion make an enticing stuffing for healthy yellow squash.
 

Ingredients

  • 3 yellow squash
  • 1/2 cup button mushrooms, chopped
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 1 package mushroom and onion stuffing
  • 1/2 lb bacon, cooked and crumbled
  • Softened butter or margarine
  • Salt and pepper to taste

Method

Preheat oven to 350 degrees. Cook stuffing according to box. Add mushrooms, onions, garlic and bacon and let sit. Cut squash in half lengthwise and scoop of meat. Add meat of squash to stuffing mixture. Wrap squash in plastic wrap and microwave for 3 minutes. Once done, place on a cookie sheet hollow side up. Spread butter or margarine over hollow side. Add stuffing mixture and bake for 20-25 minutes until tender.

 

Notes: This is a great summer dish. I make it and pair it with baked beans and my husband's bbq. It also goes great with baked chicken. You don't have to microwave the squash but it helps cut down on cooking time in the oven.
