Southwest Chicken Soup

You can adjust the spice to taste for this creamy chicken soup. It's so easy!
 

Ingredients

  • Boneless chicken thighs (8 pieces of thigh meat)
  • One bell pepper
  • 2 cans cream of mushroom soup
  • 2 cans cream of chicken soup
  • 1/2 cup of chunky salsa, medium or mild
  • 1 onion
  • 1/3 cup fresh cilantro
  • 1 Tablespoon of Slap ya Mama seasoning
  • 2 cups shreded mexican blend cheese
  • 1 bag nacho chips

Method

Chop the chicken and saute in a small amount of oil on the stove top. Mix the 2 soups, salsa and Slap Ya Mama Seasoing. Finely chop the bell pepper and onion and add to the cream mixture. Then add cilantro to the cream mixture. Add the cooked chicken to the soup mixture and heat on the stove over low heat for 20 minutes, stirring often. Add shredded cheese and stir to melt. Put a small amount of nachos in the bottom of a bowl and top with soup.

 

Notes: I like Pace salsa. Slap Ya Mama is a cajun seasoning. If you can't find in a store, try the internet.
