Southwestern Stuffed Meatloaf

An attractive roll of traditional meatloaf, stuffed with a savory bread and Pepper Jack cheese stuffing.
Ingredients
- Meatloaf:
- 2 lbs ground beef
- 1/2 cup crushed crackers
- 2 eggs
- 1/2 cup milk
- 1 small onion, diced
- 1/2 stalk celery, chopped
- 2 tbsp diced green pepper
- 1 1/2 tbsp Worcestershire sauce
- 1 1/2 tsp seasoning salt
- 1/8 tsp pepper
- Hot Pepper Cheese Stuffing:
- 2 cups rye bread crumbs
- 2 cups white bread crumbs
- 1/4 cup melted butter
- 1 onion, chopped
- 1 stalk celery, chopped
- 1/4 tsp poultry seasoning
- Salt and pepper to taste
- 1/3 cup Pepper Jack cheese

Method
Preheat oven to 350 degrees. Melt butter in a small saucepan and saute onion and celery until tender. Combine remaining stuffing ingredients in a bowl, add vegetables and butter, then mix to combine. Mix meat loaf ingredients, reserving enough meat mixture to seal ends of loaf. Lightly grease a sheet of waxed paper and place in a large oblong cake pan. Press meatloaf mixture on paper to evenly fill pan. Press stuffing over meatloaf evenly. Lift paper at wide end of pan, and roll like a jelly roll. Use remaining meat patties to seal ends of loaf, where needed. Wrap in greased foil and bake. When done, top may be opened for extra browning. Bake 1 1/2-2 hours, depending on size of loaf.
