Spanish Country Soup

This soup reminds me of something you would find in an old country restaurant; potatoes, spinach, and sausage. This makes a great meal.Ingredients
- 2 tbsp olive oil
- 1 cup sweet onion, chopped
- 2 tsp minced garlic
- 1/4 lb diced ham
- 1 1/2 cup fresh peeled tomatoes, or use 1 19 oz can tomatoes
- 1 19 oz can garbanzo beans
- 1 15.9 oz can great northern beans
- 5 cups chicken stock
- 1 tsp ground cumin
- 1/2 lb chorizo sausage or hot Italian sausage
- 2 cups potatoes, washed, skin on, diced
- 1/2 lb fresh spinach or 1 10 oz package of frozen spinach, thawed
- Coarse ground salt to taste
- Fresh ground pepper to taste

Method
In a large pot add olive oil and heat. Add onions and cook until tender. Add garlic and cook 1 or 2 more minutes on medium heat. Add ham and cook another 2-3 minutes. Add tomatoes and beans including juices. Add stock and cumin, stir well and bring to a simmer. In a small pan, brown sausage; drain. Add sausage to soup along with chopped potatoes. Simmer until potatoes are tender, about 15 minutes. Stir in chopped spinach and season to taste with salt and pepper. Simmer 5 more minutes.
Notes: A little smokey, a little spicy, and very substantial. Soak it up with some crusty bread and wash it down with a bracing mug of beer. It really makes for a stick to your ribs combination. Great comfort food for fall and winter time.
