Spicy Chicken Peanut Noodle Salad

A spicy peanut and sesame seed sauce is the perfect accompaniment to grilled chicken breasts, noodles and a mix of colorful vegetables.
Ingredients
- 4 boneless skinless chicken breasts
- Juice and zest of one lime
- 2 tbsp soy sauce
- 2 garlic cloves, minced
- 1/4 tsp cayenne pepper
- 1 tsp sesame oil
- 1 tbsp olive oil
- 1 package whole grain spaghetti
- 2 tbsp chunky peanut butter
- 1 tsp sriracha sauce
- 1 tbsp honey
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 2 tsp toasted sesame seeds
- 1 cucumber: peeled, seeded and cut into matchsticks
- 1 carrot, shredded in long pieces
- 1 red pepper, cut into matchsticks
- 2 scallions, sliced diagonally
- 2 tbsp cilantro, chopped
- 2 tbsp peanuts, crushed

In a small bowl, mix lime juice and zest, soy sauce, garlic, cayenne pepper, sesame oil and olive oil. Place mixture and chicken breasts in a large plastic bag and press air from bag to cover chicken with sauce. Marinate one hour or overnight. Grill chicken until cooked through. Cook spaghetti according to package then drain. In a large microwave safe bowl, add peanut butter, sriracha, honey, soy sauce and sesame oil. Microwave on high for 20 seconds to melt peanut butter. Remove from microwave and mix, then stir in sesame seeds. Add spaghetti noodles, cucumber, carrot, red pepper and scallions, then toss. Top with chicken breasts and sprinkle with cilantro and peanuts. Serve warm or cold.
Notes: This recipe is a great way to incorporate whole grain pasta into your diet.
