Spicy Stuffed Breakfast

Serve these biscuit sandwiches for a quick and easy breakfast. Just fill refrigerated baked biscuits with a spicy sausage and cheese mixture and heat through.
 

Ingredients

  • 1 lb pkg. uncooked Pork Sausage
  • 2 packages (8 each) refrgerated buttermilk biscuits
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 4-oz. can diced green chilies, chopped
  • 2 green onions, finely chopped
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon dried thyme, crushed
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 2 teaspoons lemon juice
  • 1/4 cup mayonnaise

Method

In medium skillet, cook sausage until browned. Drain excess fat. Bake biscuits as directed, turning halfway through the baking time. Let biscuits cool, cut in half, and then hollow out middles. Mix remaining ingredients and sausage and stuff each biscuit half. Put each half biscuit together with its other half and place on baking sheet. Bake at 400 degrees until cheese melts. Serve warm.
