|Butter or Oil To Fry Eggs|
|2||1/4" Ham Steaks, cut to form 4 biscuit sized ham slices|
|4 slices||Pepper Jack Cheese|
|2||Whole Green Fire Roasted Chiles, cut lengthwise in half|
Bake or warm biscuits per instructions on can, package or recipe. Meanwhile, fry eggs to preference in oil or butter, adding salt and pepper to taste. Fry ham until hot and slightly brown. Cool baked biscuits for 1 minute and slice open. Layer pepper jack cheese, ham slice, egg and chili pepper on top of each biscuit, then close with top half of biscuit. Serve immediately.
I used canned biscuits for this recipe, it makes it so easy. Sometimes, when I have a little extra time, I'd love to make a cornmeal biscuit from scratch and serve this as a morning treat.
