Spinach Ravioli with Alfredo Sauce

Wonton wrappers make a quick and easy ravioli--stuff with cheese and spinach in a creamy Alfredo sauce for an authentic Italian dinner.
 

Ingredients

  • Ravioli Filling:
  • 1 15 ounce container ricotta cheese
  • 2 8 ounce balls fresh buffalo mozzarella, drained and shredded
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh baby spinach, finely chopped
  • 1 large egg
  • Kosher salt and freshly ground black pepper to taste
  • 48 wonton wrappers
  • Alfredo Sauce:
  • 1 pint heavy cream
  • 1/2 cup unsalted butter, softened
  • 1 cup freshly grated Parmigiano Reggiano
  • Freshly cracked black pepper to taste
  • Chopped fresh flat leaf parsley for garnish

Method

Filling: Combine all ingredients in a mixing bowl and stir to incorporate. Ravioli: Place 1 tablespoon of filling in the center of a wonton wrapper. Brush edge of wrapper lightly with water. Fold wrapper in half, enclosing filling completely, and forming a triangle. Pinch edges to seal then transfer ravioli to baking sheets. Repeat with remaining filling and wrappers. This can be prepared up to 2 hours ahead then cover and refrigerate. Working in batches, cook ravioli in a large pot of boiling salted water until just tender, stirring occasionally, about 4 minutes per batch. Transfer ravioli to a large shallow bowl. Alfredo Sauce: Heat heavy cream over low medium heat in a deep saute pan. Add butter and whisk gently to melt. Sprinkle in cheese and stir to incorporate. Season with freshly cracked black pepper. Serve over ravioli.
