Springtime Zesty Easy Pasta Salad
Use any bottled salad dressing you like on this easy pasta and vegetable salad.
Ingredients
- 1 16-ounce box garden rotini pasta
- 1 tablespoon olive oil
- 1 large cucumber, sliced
- 1 small onion, diced
- 1 large tomato, diced
- Salt (optional)
- Black pepper (optional)
- 1 1/2 cups bottled zesty fat-free Italian salad dressing

Method
In a large pot cook pasta in salted water; drain thoroughly. Rinse with cold water; drain again. Transfer pasta to a large salad bowl. Add olive oil, cucumber, onion, and tomato. Season to taste with salt and pepper, if desired. Pour salad dressing over salad; toss to coat. Cover and chill until cold.
Notes: Great for a light main meal during the hot days of summer.
