Stout Italian Sausage Subs

Italian sausage, peppers, onions and tomatoes create a hearty sub sandwich. Bonus--the left over sauce makes a second meal when served with pasta.
Ingredients
- 1 tbsp olive oil
- 1 green pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 pkg Italian sausages
- 1 14.5 oz can whole peeled tomatoes in tomato sauce
- 1 12 oz bottle beer or ale
- 1 tbsp Italian seasoning
- 1 teaspoon cumin
- 1/2 teaspoon pepper
- 1 teaspoon chili powder
- Hoagie buns

Method
Heat oil over medium heat in large skillet. Saute peppers and onions until onions are translucent. Add garlic, sausauges, beer and seasonings. Cook on medium high heat until beer reduces by half. Puree tomatoes in a blender and add tomatoes after beer has been reduced. Cover and simmer on low for 20 minutes or until sausages are cooked through. If too much liquid evaporates, add a little water or tomato juice to pan. Serve sausages on hoagie buns with onion and peppers on top.
Notes: You can double the recipe and use leftovers as a delicious pasta sauce. Cut sausage into bite sized pieces and server over your favorite prepared pasta.
