Summer Vegetable Confetti

This colorful side dish is very quick to prepare, particularly if the cutting is done ahead of time.
 

Ingredients

  • 4 ears fresh corn
  • 1 lb zucchini
  • 1 red bell pepper
  • 2 tbsp extra virgin olive oil
  • 2 tbsp butter
  • 1/2 cup snipped chives
  • 1/2 teaspoon salt
  • Freshly ground pepper
 
Method

Set an ear of corn on end, and with a sharp knife, cut off kernels by running knife down length of ear. Repeat with remaining corn. If you do this on a clean terry towel, the corn won't slip and the kernels won't bounce all over. Break any corn clusters into individual kernels. Cut zucchini and red bell pepper into 1/4 inch dice. Place olive oil and butter in a large skillet and place over medium high heat. Add vegetables and saute, stirring until vegetables are crisp tender, 1-2 minutes. Stir in chives, salt and pepper. Serve immediately.
